I have the perfect book for you..”French Farmhouse Cookbook” by Susan Herrmann Loomis.
My mother is french and i lived there until I moved to America at 12..My Grandfather was from the country…and the foods we ate were nothing like you see in restaurants….This is the only book that actually has the foods I ate as a child…Like Rillettes ,and chicken Gizzard confit

Do you speak French? If you do, I would recommend “Les recettes faciles de Françoise Bernard.” I think it was translated once but I’m not sure it’s in print.
I also write a blog about everyday French cooking, which is kind of dormant for the moment but that I’ll be working on during the year:
